Glorified Morning Nut Bar


Breakfast 101. I love talking about breakfast. It sets the tone for your day and can be the difference maker in your mood, energy, and cravings. A lot of breakfast options are dessert in disguise when you breakdown the sugar, carbs, fiber and protein content. My advice is to stick to one serving of carbohydrate and focus on fiber, protein and healthy fats to minimize the increase in your blood sugar. The macronutrient breakdown of this bar is designed to stabilize your blood sugar first thing in the morning and prolong the physiological benefits of your overnight fast such as improved cognitive function, decreased inflammation, weight management, and improved blood sugar response. My go-to breakfast item is this “Glorified Nut Bar” alone or crumbled over fruit. It’s an upgraded nut butter bar with nourishing nuts butter mixed with some of my other favorite healthy fats, coconut and flax seeds, collagen protein, and a little honey and is the perfect easy breakfast option. I make a big batch and keep it in my freezer for a quick and satisfying breakfast option.

Ingredients​​ *about 5 bars

  • ½ cup unsweetened almond butter

  • 2 tbsp flax seeds

  • 2 tbsp unsweetened coconut flakes/shreds

  • 5 tbsp almond flour

  • ½ tsp vanilla extract

  • Sprinkle of sea salt

  • 1.5 tsp honey (optional)

  • 1 scoop plain collagen protein (optional)

  • 3-4 drops organic liquid stevia (optional)

Directions

  1. Place all ingredients, except the sea salt, into a mixing bowl.

  2. Mix until fully blended – this may require some serious muscle and pounding. If the mixture is too oily, add more almond flour. If it is too dry and crumbly, add more almond butter.

  3. Flatten mixture into a small plan or glass Tupperware.

  4. Sprinkle with sea salt.

  5. Cover and place in freezer for at least 3 hrs before eating. Bars will keep in freezer for 6 months.
