Granola and cookies are two very delicious things. When combined, the result are these No-Bake Granola Cookies balls that are amazingly delicious with that crunchy, sweet granola taste and soft cookie texture. They’re easy to make and require minimal ingredients. I make a big batch and keep them in the fridge for a quick breakfast, snack or dessert. I love how you can change up the flavors using different granola brands. My favorite is Purely Elizabeth! Enjoy!
Ingredients *makes ~8 balls
2 tbsp almond butter
3 tbsp coconut butter
1 tbsp vanilla extract
1.5 tbsp maple syrup
1 tsp cinnamon
1/2 cup almond flour
1/4 cup + 2 tbsp Granola (I like Purely Elizabeth)
Directions
Melt almond butter and coconut on the stove or in a microwave.
Once melted, blend in vanilla extract, maple syrup and cinnamon.
Sift almond flour into mixture.
Put granola into a blender to remove any chunks (you can also put in a Ziploc bag and mash to remove chunks).
Mix the blended granola into the batter until smooth.
Roll batter into balls and place on parchment paper.
Put balls in the refrigerator for at least 40 minutes before eating.
Keep in refrigerator or freezer for up to a month.
