MINTY PEA & AVOCADO DIP


This Minty Pea & Avocado Dip is one of my absolute favorite dips of all time. It's super light, refreshing, healthy, and great with a a glass of wine while watching the sunset. It also takes about 5 minutes to make. Minty Pea & Avocado Dip is a serious crowd-pleaser and literally disappears within minutes. I like to dip rice crackers or fresh veggies into it. You could also use it as a spread or on salads or pasta. Make this pronto.

The original recipe inspiration came from Martha Stewart, and I made a few healthy swaps to the recipe.

Ingredients:

  • 1 cup partially thawed frozen peas

  • 1/2 ripe avocado

  • 1/4- 1/2 cup olive oil (depending on the consistency you want)

  • Juice from half of a lemon

  • Handful of fresh mint

  • Salt to taste

Directions:

  • Blend all ingredients in a food processor until smooth

  • Serve with rice crackers, fresh veggies, on pasta, or as a spread
