NO BAKE MATCHA CACAO COOKIES


I'm so excited about these No Bake Matcha Cacao Cookies! Matcha is one of my favorite ways to get a good caffeine fix. For anyone not familiar with Matcha, it is typically found in powder form and is basically ground up green tea leaves. It also has some serious health benefits! Matcha is full of antioxidants and linked to reducing risk for heart disease and cancer, facilitating blood sugar regulation and boosting metabolism. I love my Matcha mixed with almond milk for a creamy latte, but it's even more delicious in these cookies! I tried to recreate some of the flavors of a matcha latte in these cookies with creamy coconut butter and my favorite spices: cinnamon and nutmeg. The cacao nibs add a nice crunch and that chocolate flavor! I hope you love these!

Ingredients *Makes about 10 1-inch cookies

  • 3 T coconut butter

  • 1 T vanilla extract

  • 2 T organic maple syrup or honey

  • 1 cup almond flour

  • 1 tsp Ceremonial Grade Organic Matcha Powder (I like Viva Naturals)

  • 1/2 tsp ground cinnamon

  • 3 dashes ground nutmeg

  • 2 dashes salt

Directions

  1. Melt coconut butter and mix with vanilla extract and maple syrup.

  2. Mix in salt, matcha powder, cinnamon and nutmeg, and then slowly add almond flour until well combined.

  3. Stir in the cacao nibs.

  4. Roll into balls and then flatten into cookies. Press fork on top to make impressions.

  5. Place on parchment paper in freezer for at least 15 minutes before eating. Enjoy!
