These protein balls are, in my opinion, the ideal little ball of carrot cake, nutritious goodness that can function as breakfast, a snack or even dessert. The best kind of food fits into any eating category.
These Carrot Cake Protein balls require NO baking and could not be easier to make. They not only taste like Carrot Cake, but they are gluten-free, dairy-free, vegan and have zero added sugar. They’re also packed with vegetables, healthy fats, protein, and fiber so they’ll keep you satiated and happy whether you’re between meetings, running out your door or starting your day with an energizing breakfast. Ingredients
1 cup chopped carrots
½ of 1 banana (or 1 T maple syrup)
4 tbsp nut butter of choice (I like almond butter)
1 tbsp chia seeds
2.5 tbsp shredded coconut, unsweetened
¼ cup almond flour
1 tbsp coconut oil
½ tsp cinnamon
¼ tsp nutmeg
Directions
Blend all ingredients in a food processor
Freeze (will last longer) or refrigerate and enjoy!
Recipe makes approximately seven 2 tbsp-sized balls
