With under 5 ingredients, this cucumber salad could not be easier and it's low-cal, paleo and vegan. The cucumbers and onion add a nice crunch and the dressy is sweet and tangy. This recipe makes for a great side salad and it also keeps for a day or two, so it's perfect for lunch the next day!
Ingredients:
1 cucumber, thinly sliced
1/2 white onion sliced or chopped (red onion would also work)
1 tablespoon rice vinegar
1 teaspoon soy sauce
Salt & Pepper to taste
Red Pepper Flakes to taste
Directions:
Place cucumber and onion in a bowl
Whisk together vinegar and soy sauce and mix into bowl with cucumber and onion
Season with salt, pepper and red pepper flakes
Serve cool
