CREAMY CILANTRO TAHINI SALAD DRESSING


Let’s be honest, one of the best parts about a salad is the dressing. I’m really not a fan of most salad dressings sold in grocery stores. Unfortunately, they usually have WAY too many ingredients, added sugars and are highly processed. Fortunately, it’s SO easy to make homemade and delicious salad dressings with simple ingredients that most people already have in their kitchen. Honestly, sometimes my dressing is as simple as olive oil and salt.

I love this Cilantro Tahini salad dressing because it packs in tons of flavors. The tahini makes it super creamy and thick, the cilantro makes it tangy and fresh, and the garlic and soy gives it a little flare of spice. It’s a very versatile dressing but my favorite salad for this dressing is my kale and cabbage salad (pictured below). The salad ingredients are just kale, purple cabbage, and sesame seeds. It’s best to massage the kale with the dressing and let it sit and soak into the greens for about an hour before eating (the longer the better!).

*Makes about 5-6 servings

Ingredients

  • 1/3 cup tahini

  • 2.5 tbsp olive oil

  • 1 cup fresh cilantro

  • 1/4 cup water (you can use less/more depending on desired thickness)

  • 1 tbsp apple cider vinegar

  • 1 tsp fresh lemon juice

  • 1/4 tsp salt (+ more to taste)

  • 1 fresh clove garlic

  • ½ tsp tamari soy sauce

  • ½ tsp balsamic vinegar

Directions

Blend all ingredients in food processor to desired consistency. Enjoy on salad or as a veggie dip. Store in refrigerator for up to 5 days.
