For some reason, Frittatas have always slightly intimidated me. I have no clue why because they could not be easier to make. Thank god I've discovered this because they are SO delicious and make for a great one-pot meal. Frittatas are a perfect breakfast to make in advance and serve to a group because they look so pretty (especially in my mini cask-iron skillet)!
You can throw basically anything into a frittata, but I love this combo of rep pepper, spinach and basil. The colors really pop and basil is my favorite!
Ingredients:
2 eggs
1/2 cup spinach
Half a red pepper, sliced
2 tablespoons chopped basil
Salt & Pepper to taste
1 teaspoon olive or avocado oil
Directions:
Preheat oven to 400 degrees
Crack eggs into a bowl, season with salt and pepper, and whisk until blended
In your skillet, heat oil and stir in peppers for 1-2 minutes
Add spinach to the skillet, season with salt and pepper, and cook until spinach is wilted
Spread vegetables across the pan, sprinkle half of basil onto vegetables, and then pour eggs on top
Sprinkle the remaining basil on top of eggs
Heat frittata over medium-low heat for about 3 minutes
Transfer frittata to the oven and heat for another 3 minutes, or until eggs are set
Cool and serve warm :)
