CHOCOLATE PEANUT BUTTER CHIA PUDDING


Ready for some chocolate pudding for breakfast? Read on. Chocolate Peanut Butter BLENDED Chia Pudding. I love chia seeds and chia pudding for so many reasons but I sometimes avoid eating them because the consistency can be strange and the seeds almost always get stuck in my teeth. I recently saw a recipe for blended chia pudding and I was so excited! Chia pudding is not typically blended into a smooth and creamy consistency and it makes such a difference for me! The texture of this blended chia pudding is just like real pudding and no more seeds in my teeth. Win, win. Add in some chocolate, peanut butter, vanilla and cinnamon and you've got yourself a delicious and nutritious breakfast, snack, dessert. Below is the recipe! Enjoy!

Ingredients

*Makes 1-2 servings

Entire recipe = ~350 calories

  • 2 T chia seeds

  • 2/3 cup coconut milk

  • 1/3 cup almond milk

  • 1.5 T cacao powder

  • 1 T peanut butter powder (I like the Naked Brand)

  • 1 tsp bee pollen

  • 1/4 tsp vanilla extract

  • 1/4 tsp cinnamon

  • 2 tsp maple syrup (optional sweetener)

  • Cacao nibs for topping (optional but I love the flavor and crunch) *Optional to sub coconut yogurt for all or some of the coconut milk or just add into the mixture when blending for extra creaminess!

Directions

  1. Mix all ingredients together, put in an airtight container and place in the fridge for at least 1 hour (can leave for up to 12 hours).

  2. Remove from fridge and place in blender until smooth.

  3. Top with cacao nibs or any of your favorite toppings and serve cold!
